Wontons
- 1 package of thin wonton wrappers
- 1 pound of ground pork
- 1 green onion, chopped
- 2 teaspoons of grated ginger
- 4 tablespoons of Shaoxing wine
- 2 tablespoons of toasted sesame oil
- 2 teaspoons of white pepper
- 1 egg
Sauce
- 4 tablespoons of chili oil
- 2 tablespoons of Chiangking black vinegar (or rice wine vinegar)
- 2 tablespoons of soy sauce
- 2 teaspoons of grated ginger
- 3 cloves of minced garlic

- Stir the pork, egg, Shaoxing wine, sesame oil, ginger, green onion, white pepper, and egg. Use chopsticks and stir really quickly in one circular direction until smooth.
- Wrap about 1 teaspoon of the meat mixture into each wrapper, using water to seal.
- Carefully add the wontons into a pot of boiling water (work in batches) and let them cook for about 5 minutes until fully cooked.
- Mix all the sauce ingredients together and serve over the wontons.
