- 1 package of RightRice (I used Original, but the picture shows Garlic Herb)
- 1 shallot, chopped
- 2 cloves of roasted garlic
- A handful of pancetta, chopped
- 1 3/4 cups of chicken stock or water
- 1/3 cup of grated Parmesan or any hard cheese
- 1 tablespoon of butter

- In a medium saucepan, cook the shallots, garlic, and pancetta with olive oil until the pancetta gets slightly crisp.
- Add the RightRice into the pan, along with the chicken stock or water. Bring to a boil. Once it reaches a boil, lower the heat and cover the pan. Let it simmer for about 5 minutes, adding more liquid if necessary.
- Remove from the heat and stir in the butter and cheese.
- Top with anything you like. I roasted cremini mushrooms until they were slightly crispy. I also added some arugula that I drizzled with olive oil and white wine vinegar.
