Faux Risotto


I N G R E D I E N T S

  • 1 package of RightRice (I used Original, but the picture shows Garlic Herb)
  • 1 shallot, chopped
  • 2 cloves of roasted garlic
  • A handful of pancetta, chopped
  • 1 3/4 cups of chicken stock or water
  • 1/3 cup of grated Parmesan or any hard cheese
  • 1 tablespoon of butter

D I R E C T I O NS

  1. In a medium saucepan, cook the shallots, garlic, and pancetta with olive oil until the pancetta gets slightly crisp.
  2. Add the RightRice into the pan, along with the chicken stock or water. Bring to a boil. Once it reaches a boil, lower the heat and cover the pan. Let it simmer for about 5 minutes, adding more liquid if necessary.
  3. Remove from the heat and stir in the butter and cheese.
  4. Top with anything you like. I roasted cremini mushrooms until they were slightly crispy. I also added some arugula that I drizzled with olive oil and white wine vinegar.
