Wontons

  • 1 package of thin wonton wrappers
  • 1 pound of ground pork
  • 1 green onion, chopped
  • 2 teaspoons of grated ginger
  • 4 tablespoons of Shaoxing wine
  • 2 tablespoons of toasted sesame oil
  • 2 teaspoons of white pepper
  • 1 egg

Sauce

  • 4 tablespoons of chili oil
  • 2 tablespoons of Chiangking black vinegar (or rice wine vinegar)
  • 2 tablespoons of soy sauce
  • 2 teaspoons of grated ginger
  • 3 cloves of minced garlic

D I R E C T I O NS

  1. Stir the pork, egg, Shaoxing wine, sesame oil, ginger, green onion, white pepper, and egg. Use chopsticks and stir really quickly in one circular direction until smooth.
  2. Wrap about 1 teaspoon of the meat mixture into each wrapper, using water to seal.
  3. Carefully add the wontons into a pot of boiling water (work in batches) and let them cook for about 5 minutes until fully cooked.
  4. Mix all the sauce ingredients together and serve over the wontons.
