Tofu Tacos

I N G R E D I E N T S

  • 1 cup of instant corn masa flour
  • 3/4 cup of water
  • 1 block of firm tofu, cubes
  • 1 tablespoon of paprika
  • 2 teaspoons of cumin
  • 2 teasoons of salt
  • 2 teaspoons of black pepper
  • 2 teaspoons of cayenne pepper
  • 1 tablespoon of corn starch
  • Cooking spray
  • 1/2 of a white onion diced
  • 1/2 cup of chopped cilantro
  • Salsa of choice

D I R E C T I O N S

  1. Press the tofu with paper towels to remove as much moisture as possible.
  2. Mix the paprika, cumin, salt, pepper, cayenne pepper, and corn starch together. Evenly coat the tofu cubes in the spice mixture, then spray with cooking spray. In a lightly oiled skillet, cook the tofu until darkened and slightly crisp.
  3. Mix the Masa flour and water to form a dough. Measure out 35 grams of the dough and roll into a slightly flattened ball. Use a tortilla press or rolling pin to flatten the dough. Repeat with the remaining dough.
  4. In a pan, heat the tortillas on medium. Top the tortillas with the tofu, cilantro, onion, and avocado salsa .
