- 1 cup of instant corn masa flour
- 3/4 cup of water
- 1 block of firm tofu, cubes
- 1 tablespoon of paprika
- 2 teaspoons of cumin
- 2 teasoons of salt
- 2 teaspoons of black pepper
- 2 teaspoons of cayenne pepper
- 1 tablespoon of corn starch
- Cooking spray
- 1/2 of a white onion diced
- 1/2 cup of chopped cilantro
- Salsa of choice
D I R E C T I O N S
- Press the tofu with paper towels to remove as much moisture as possible.
- Mix the paprika, cumin, salt, pepper, cayenne pepper, and corn starch together. Evenly coat the tofu cubes in the spice mixture, then spray with cooking spray. In a lightly oiled skillet, cook the tofu until darkened and slightly crisp.
- Mix the Masa flour and water to form a dough. Measure out 35 grams of the dough and roll into a slightly flattened ball. Use a tortilla press or rolling pin to flatten the dough. Repeat with the remaining dough.
- In a pan, heat the tortillas on medium. Top the tortillas with the tofu, cilantro, onion, and avocado salsa .
