An oldie but goodie dinner inspo from @rusticjoyfulfood always 🍅🍅🍅

Chickpea curry is my favorite meal to prep for the week because it's so dang easy and uses a bunch of pantry items. It's vegan friendly if you omit the yogurt! Sorry/you're welcome to anyone who has to smell me microwaving this in the office tomorrow 🍛 1. Dice 2 carrots and half a yellow onion. Mince 3 cloves of garlic. 2. Rinse 2 cans of chickpeas and drain. 3. In a saucepan over medium high heat, sautee the carrots and onions in oil until slightly softened. Add the garlic and continue to cook. 4. Mix in 2 tablespoons of garam masala, 1 teaspoon of cumin, and 1 teaspoon of turmeric. 5. Add a can of diced tomatoes and half a cup of coconut milk and simmer on low medium heat for about 10 minutes. 6. Add in the chickpeas (I also added some green peas and fresh cherry tomatoes) and continue to simmer for another 5 minutes. Remove from heat. 7. Serve over brown or basmati rice with a dollop of nonfat plain Greek yogurt and cilantro.
