After hours of slaving away in the kitchen, cooking Thanksgiving or Christmas dinner, what’s the most dignified way to utilize the leftovers? Sandwiches, of course. St. Patrick’s Day is no different. On a toasted roll, I piled on the leftovers from my third favorite meal of the year. Thinly sliced corn beef, cabbage, carrots, potatoes, horseradish, and mustard.
I considered going to the store to pick up some Swiss cheese, but I couldn’t bear to leave my pathetic pupper home alone. If I had Swiss cheese on hand, you best believe I would’ve turned this sandwich into a crispy, melty, panini.
I’m a genius.
Update: my snake plant grew a baby snake. I am now desperately looking for a perfect, ceramic planter before it outgrows its home.
