After walking Moose way too early this morning, I went to Nugget to pick up a few ingredients to make a glorified version of basic avocado toast. I have been feeling groggy and under the weather lately, and was craving something fresh and easy for brunch. I already had a couple ripe avocados at home, so I picked up:
- A fresh baked sourdough batard
- Radishes
- Watercress
- Smoked wild caught salmon
- Brie cheese
First, I brushed slices of the sourdough with olive oil and I grilled them on a grill pan. While the bread grilled, I mashed up an avocado with a squeeze of lemon juice and thinly sliced the radishes. When the bread was toasty, I layered the slices with avocado, radishes, smoked salmon, a poached egg, and a few leaves of fresh watercress. So good with cracked black pepper!
For a sweeter crostini, I smeared brie cheese on a slice of bread and topped it with lingonberry jam. I’m drooling.
Honestly just look at that yolk though…
